Hades Honey Glazed Rack of Lamb!!!

This Recipe requires a good amount of heat, therefore, you may want to grill the lamb over very hot coals or oven broil or convection bake at 500 degrees!
Start by preheating your oven; while you wait you may prepare the glaze.

In a sauce pan, mix 1/4 cup Apple Cider, 2 tspn Hades Honey; 4 tspn Brown Sugar
Mix ingredients over low heat until sugar and jelly is dissolved.

This recipe uses 1 Rack of Lamb (make sure that the meat is room temperature before cooking)

Rub the lamb with olive oil, salt, pepper, and the juice of 1 lemon

Sear the Lamb, bone side up first.
Once seared, leave bone side down and baste often until well caramelized.
Cooking Time 15-25 Minutes!

Use a meat thermometer to determine the desired amount of cooking:
125 degrees - Medium Rare
165 degrees - Well Done

Once you have cooked the lamb be sure to let the meat rest 15 or so minutes before cutting the meat to ensure the natural juices don't run out onto the plate.  This also allows the meat to finish cooking while it cools.

For Thanksgiving! Try HH Rutabaga!!

If you have never tried a Rutabaga, prepare for a taste treat!  The Rutabaga originated as a cross between cabbage and turnips; the flavor is milder than both.  If prepared properly, the color is bright yellow!  This will look beautiful on your holiday plate!  So to make this savory treat the Hades Honey way, do as follows:

Peel and dice the Rutabaga in bite size (one inch or so squares)

Prepare a sufficiently deep pan or pot with a spray of cooking oil or "Pam"
Fill pan or pot with enough water to just cover the Rutabaga
Add 1 tablespoon of sugar per cup of Rutabaga
Add 1 tablespoon of butter per cup of Rutabaga
Salt and Pepper to taste
One teaspoon of Hades Honey per cup of Rutabaga

Thoroughly mix the ingredients and then add the Rutabaga

Cover pot or pan and bring to a simmer; cook until fork tender

Serve on plate with a slotted spoon to drain the liquid

*Chef Tommy's Advice
If planning on holding the Rutabaga for more than 1 hour, add a teaspoon of Turmeric to preserve the yellow color of the Rutabaga.  Otherwise your vegetable may turn gray while waiting on guests.

If you have dietary restrictions, you may use sweetener to substitute for sugar and "I can't believe its not butter" for the butter.  The only sugar will come from Hades Honey and the vegetable.

Hades honey chile!!!
2 cloves of garlic; 1 ½ Onions; 2 diced poblano chile or green pepper
2 ½ lbs of ground beef; 12 oz of Chile beans; 1 12 oz can of crushed tomatoes
1 12 oz can of tomato sauce; ½ cup chile powder; 2tbs of cumin; 16 oz Chicken Stock
2 cups water; ½ jar Hades honey  Salt to taste!!
Chop onion and sautee in olive oil.  Add in garlic and sautee until brown.
Add Beef and cook until done.
(1-2 hrs).

Had Enough Sour and Vinegar in Your Bloody Mary? Try Sweet Heat!!

Simply take One Teaspoon of Hades Honey and add it to your favorite Bloody Mary Mix!  Enjoy the Sweet Heat of Hades Honey in this cocktail favorite!!

Asian Dipping Sauce / Marinade

This recipe is a great spicy dipping sauce for sushi, pot stickers, egg rolls, spring rolls, summer rolls etc.
Also, this is a great marinade or finishing sauce for fish (salmon, tuna steak, sword fish, shrimp, etc.)

One cup Soy Sauce
Tsp Ginger
Tsp Lemon Grass (if you can find it)
Tblspn Hades Honey (or to taste)

Chef Tommy's Hades Honey Stuffed Brats!

This is a easy way to make Brats better!  Simply split the brat open not cutting entirely through, take Hades Honey and paint the inside of the Bratwurst with Hades Honey and place cheese, cherry tomatoes, green onion, sauteed onion, spinach, etc... be creative.  Then take the Brat and close by wrapping the Brat with two strips of bacon.  The Brat will not need any tooth picks to close.  Grill until golden brown and baste with some additional Hades Honey for more heat if desired.

Chef Tommy's Hades Honey BBQ Hot Wings!!!!!!

1 Cup Ketchup

½ Cup Brown Sugar (packed)

1 tsp granulated garlic

1 tsp onion powder

1 tsp black pepper

1 tblspn whisky

3 tblspn Hades Honey



Toss wings in olive oil salt & pepper

Broil at 400 for 40 min.

Take out and toss in sauce to coat and finish under the broiler until slightly charred

The remainder of the sauce reserve for dipping or use as a BBQ sauce.

Chef Tommy's BASTING SAUCE!!!!

This recipe is for those of you who are looking for a way to use Hades Honey in your everyday cooking!  This recipe not only allows you to lessen the heat but it also allows you to baste the sweet sting on your favorite Roast, Ham, Whole Chicken, Turkey, Pork Tenderloin, Fish and BBQ! 

3 CUPS JUICE (APPLE, PINE APPLE, LEMON, LIME, POMEGRANATE, be creative!!!)
4 CUPS BROWN SUGAR
I CUP AROMATIC LIQUOR (RUM, SHERRY, TEQUILA etc.)
... 3 TABLE SPOONS HADES HONEY (or more to taste)
PLACE INGREDIENTS IN SAUCE PAN
REDUCE TO ½ VOLUME OVER LOW HEAT

BAKE OR ROAST YOUR FAVORITE DISH AND
BASTE
EACH 10 MIN UNTIL GOLDEN BROWN.
